Catering is the event line item with the highest failure mode — food runs out, cooking delays push dinner to 11pm, plantain-leaf meal quality drops after guest #400. Our vendor panel is pre-audited for capacity (how many plates before drop-off?), sourcing (rice / milk / meat vendor chain), and backup (hot-line sub-kitchen within 10 km).
We also handle the dietary matrix — nowadays a corporate event has vegan, Jain, gluten-free, halal, Kosher, low-FODMAP, and diabetic-friendly guests. Without a written dietary matrix signed off 72 hours before, you're gambling. We run the matrix.
